Grilling Fish and Shellfish: Quick and Easy Recipes for Beginners

Below are basic, easy-to-follow smoked fish dishes that novices can try:

1. Kyoto-Style Grilled Salmon

What you need:

• 4 salmon steaks, an inch thick

• 1 clove garlic, minced

• 1 tablespoon minced green onion

• 1/2 tsp minced ginger root

• 1/3 cup soy sauce

• 1/4 cup orange juice concentrate

• 2 tbsp veggie oil

• 1 tablespoon olive oil

• 2 tbsp tomato sauce

• 1 tsp lemon juice

• 1/2 tsp prepared mustard

In a shallow baking plate, thoroughly combine garlic, onion, ginger, soy sauce, orange juice concentrate, veggie oil, tomato sauce, lemon juice and mustard. Add salmon steaks to the mix and turn to coat. Cover and refrigerate for 1 hr. Remove fish from sauce then put mix into a tiny pan, bringa boil. Pre-heat your grill for higher heat and lightly oil grates. Brush salmon steaks with olive oil just before cooking on the grill for 5-10 minutes, turning once. Brush fish with boiled sauce halfway through grilling time.

2. Grilled Ginger Fish Kabobs

What you need:

• 3/4 kg raw firm fish (halibut, salmon or tuna), sliced in portions

• 4 cups pineapple chunks

• 1 big red onion, sliced into wedges

• 2 garlic cloves, crushed

• 3 tablespoon minced ginger

• 2 cups pineapple juice

• 1 tablespoon corn starch

• 2 tablespoon soy sauce.

• 1 1/2 tablespoon white vinegar

In a tiny pan, mix pineapple juice, corn starch, ginger, garlic, soy sauce and vinegar. Simmer for about 7 minutes up until a little thickened. Add fish and pineapple chunks to mix. Permit to cool down, cover and refrigerate for half an hour. When ready, thread fish, pineapple chunks and onion wedges alternately onto skewers. Cook on a pre-heated grill up until fish is flaky. Serve with rice.

3. Timeless Grilled Cod

What you need:

• 2 cod fillets, sliced halved

• 1 lemon, juiced

• 2 tablespoon sliced green onion

• 2 tablespoon butter

• 1 tablespoon Cajun seasoning

• 1/2 tsp lemon pepper

• 1/4 tsp ground black pepper

• 1/2 tsp salt

Season the fish with Cajun seasoning, salt and two peppers. In a tiny pan, melt butter over medium heat. Stir in onion and lemon juice for 3 minutes up until onion is softened. Pre-heat grill for medium heat and lightly oil grates. Cook cod for 3 minutes per side, basting with butter mix regularly. As soon as done, allow the fish to cool down before serving.
